About
Vermont Coffee Company®
Paul Ralston began
roasting coffee in 1980 at his bakery in Bristol, Vermont. His motto is
Coffee Roasted for Friends. It's more than a slogan for Paul, it's
his mission, his reason for being in business. As a small company, he
works hard to be a good friend.
A
friend of the farmer, he always pays farmers fair trade price. A
friend of the environment, he always uses certified organic coffee.
A
friend of his customers, he always delivers just-roasted coffee.
He roasts coffee Big and Bold. He likes deep, rich flavors without the
acidity. Thus, his blends are roasted longer and slower to bring out the
complex flavors in the beans, to caramelize the sugars, and to mellow
the beans acidity.
Vermont Coffee
Company® is the only 100% certified organic, 100% fair trade coffee company in
Vermont.
Fair Trade Coffee - Fair Trade is a disarmingly simple concept:
the price farmers receive for their coffee is based on their local cost
of production and cost of living, not on the speculative commodity
market price. Fair Trade coffee is “farmer-friendly,” so farm families
can earn a living wage without being exploited.
Certified Organic Coffee
- Organic
coffee is grown without chemical fertilizers, pesticides, or herbicides.
Composted organic material (coffee bean pulp, tree trimmings, etc.) is
used to fertilize the plants. We are certified organic by Vermont
Organic Farmers.
Shade-Grown Coffee
- Shade-grown coffee comes from coffee trees grown under a natural shade
canopy. Shade makes the coffee beans ripen slowly which greatly improves
their flavor. The shade trees, often fruits, diversify the landscape,
help retain moisture in the soil, and prevent erosion. These shade trees
are also the winter home of many migratory song birds such as Bicknell’s
Thrush, a Vermont summer resident.

Vermont Coffee Company® DARK
- Our signature coffee is a big, rich, darkly complex blend that is roasted longer and more slowly to bring out the chocolaty, caramel flavors.
Vermont
Coffee Company® MILD -
Our Mild is a
lighter, brighter blend. A lively, smooth, all-day coffee with a soft,
bull body. A classic "diner" coffee.
Vermont
Coffee Company® DECAF
-
A full-character
coffee, roasted longer and darker, with only the caffeine removed by
water process.

Café Alta Gracia® Blend Description
Café Alta Gracia®
- A single-origin coffee from the Dominican Republic farm of Vermont
writer and Dominican native, Julia Alvarez. A highly aromatic coffee
with medium body and complex flavors. It is grown sustainable under
natural shade.
Tres Mariposas®
- The name translates as “three butterflies.” A full body coffee with a
rustic, nut-like character and sweet floral aroma. Features Dominican
coffee from the farm of Julia Alvarez.

Storage & Freshness Tips
One of the questions
that Vermont Coffee Company often encounters at events and coffee
tastings is, “How should I store my coffee?” Many people we’ve spoken
to keep their coffee in the freezer, taking out today’s beans, and
putting the bag back in the freezer. The sad truth is that’s not the
best way to store your coffee.
If you plan to use the
coffee within a week or so, just leave it on your counter. The paper bag
protects the coffee from light, and the inner bag protects it from air
and moisture. For even more protection, store it in an airtight and
light-proof container, such as a ceramic canister or Tupperware
container.
If you want to keep the
coffee beyond 10 days, put some in the freezer (my experiments show it
freezes well) in an airtight container. When you need it, take it out of
the freezer, but don’t put it back (condensation can ruin the coffee).
And please, don’t store
coffee in your refrigerator; it’s damp in there, and there are often
powerful smells that the coffee may absorb.
Don’t settle for weak coffee! Use 2 tablespoons (1 coffee scoop) of
coffee per 6-ounce cup of water. If you make a mug of coffee, as we do,
use 3 tablespoons of coffee. We think you will appreciate the
difference.
