There's an old school of thought among cheddar scholars - the older, the better. We are proud to offer a rare, limited edition classic, Old School Cheddar. This beauty has been left to age undisturbed in our library of select cheddars for five years.
"Old School" is exactly what this cheese is - textbook cheddar crafted the old-fashioned way. The result is some of the finest cheese the farmer's of Cabot Creamery have ever offered.
This cheese is a 2 lb brick and is not waxed.

My favorite way is with snack food-good bread,crackers, pretzels.I serve it when we entertain. Everyone loves it.There is NOTHING not great about this cheese.

This cheese is great as an appetizer, melted as a grilled cheese sandwich, adds "zing" to cheese omelets and is great as a shredded toping on salads. The only "con" is I can't find it in local stores and the cost for shipping is high.

Do not waste in recipes. Eat alone to enjoy flavor. My wife put it in mac and cheese. It was delicious but I nearly cried. It comes available so seldom, I try to nurse it along until it's available again. I played it smart. Got two bricks. Cheese in times of no money is better than money in times of no cheese. Nobody but a VERY good friend would get this as a gift.
