Recipes
Cabot Habanero Cheddar and Black Bean Spread
Ingredients:
- 1 (15-oz.) can black-eyed peas or black beans, drained
- 2 tbsp. olive oil
- 1 1/2 tbsp. fresh lime juice
- 1 1/2 tsp. ground cumin
- 4 ounces Cabot Habanero Cheddar or Chipotle Cheddar, grated and lightly packed (about 1 cup)
- Salt to taste
Directions:
1. In medium bowl, combine black-eyed peas or black beans, oil, lime juice and cumin; mash coarsely with potato masher (mixture should hold together but some beans should still be visible).
2. Gently stir in cheese; taste and season with salt if needed.
Serve in bowl or bell pepper shells, surrounded by oven-crisped triangles of tomato or spinach flatbread or crackers.

Found this cheese while on vacation in Florida. Can't find it in Kentucky so I order it online and share it with all my friends.

One of our favorite ways to use this cheese is in a spicy hot Quiche. My recipie calls for 3 8 oz bricks of varied cheeses (ie. cheddar, swiss, jack) substituting one of the regular cheeses with the habinero makes this Quiche especially good for small servings at parties. I add crisp bacon pieces, green onion and sometimes sundried tomatoes, or it can be vegitarian by using mushrooms instead of bacon...lots of possiblities. My husband and I can eat a grilled cheese sandwich using this cheese and fried onion and tomato on good multigrain bread and sometimes we even add sliced pepperoni. This cheese sandwich is not for the timid though - It's quite hot and spicy!

I have a second loaf of bread in my little bread machine. Where it said to add 1/3 c.cheddar cheese & red onion,I thought...why not...so grated this wonderful Hot Habanero Cheddar Cheese. It is insanely delicious.If you do not care for really hot then just add a little Habanero & Sharp Cheddar-no matter-it is delicious! Try it & Enjoy!
