Recipes
Breakfast Pinwheels with Cabot Reduced Fat Cheddar and Dakin Farm Canadian Bacon
Ingredients:
- 2 ounces Cabot Neufchatel Reduced Fat Cream Cheese
- 1/4 cup fat-free ricotta cheese
- 2 ounces Cabot 75% Reduced Fat Cheddar or 50% Reduced Fat Cheddar, grated* (about 1/2 cup)
- 2 teaspoons powdered Ranch dressing mix
- 4 large whole-wheat tortillas
- 12 slices Dakin Farm Canadian bacon
Directions:
1. Combine cheeses and dressing mix; divide evenly among tortillas, spreading to edges. Place three bacon slices along center of each tortilla.
2. Roll up tortillas tightly. Wrap in plastic wrap and refrigerate for at least 1 hour or up to overnight.
3. Remove from refrigerator and cut crosswise into 3/4-inch-thick slices to serve.

I have been ordering Cabot cheese online since returning from a trip to New England last fall. The delivery is very prompt, the cheese is fresh - not like from the store where it may have been stored for a while - and it is actually somewhat less costly, even including shipping. Best of all, the cheese is made from hormone-free milk. For a cheese lover like me, it could not be better!

There is absolutely no negative about the Cabot Sharp Light Cheddar. It is labeled "sharp" but you'll never feel a stinging sensation on your tongue as with other sharp cheddars. It is perfect on any sandwich, or by itself for a snack. I get it sent directly from the Dakin Farm, and it arrives promptly and always FRESH. We use up two dozen 8oz bars way before the expiration date. WE HAVE FOUND CHEESE HEAVEN!

Love this cheese. I haven't been able to find the commercially available 50% Reduced Fat Cheddar at my local supermarkets or specialty stores, so I ordered it online. It's so good I eat it all by itself.
