Blue Ledge Camembrie – A Buttery Slice of Bovine Heaven

Blue Ledge Farm believes in a food system that is based on a cornerstone of respect for the land, the animals, the consumers, and for the local community. There’s no doubt that this belief results in happy, healthy animals that produce great milk and even better cheese! Blue Ledge Farm is home to over one hundred goats whose milk creates eleven types of high quality and consistent cheeses. As a certified Animal Welfare Approved farm, their animals are ensured to have adequate space, comfort, and access outside. And their goats certainly live a life of luxury as they spend spring, summer and fall days browsing around in the woods and lounging around green pastures Sustainable farming practices are at the top of the list at Blue Ledge Farm, from composting bed-pack manure to aging cheese storage. In 2008, they built and underground cave where their aged cheeses can mature to perfection and in 2015 their south facing barn roof was covered in solar power that now provide power to nearly half of the farm’s electricity use all summer long.

Camembrie is made with fresh, award-winning Ayrshire cow’s milk that comes from Scapeland Farm in Whiting, VT – just 4 miles down the road from Blue Ledge! It is then aged for 1 month in the cave at Blue Ledge Farm. This smooth, mold-ripened cheese is a Camembert/Brie hybrid that truly gives you the best of both worlds! Camembrie has a creamy, milky profile and is a great match with white wine and cured meats.
