Baked Eggs in Maple Toast Cups
|

Preheat oven to 400 degrees F. Melt butter and add syrup. Remove bread crusts. Flatten bread with rolling pin. Brush bread with syrup mixture and pat slices into buttered muffin tins. Sprinkle bacon pieces into bottom of each breadlined cup. Break an egg into each cup and bake for 5 minutes or until egg is set. Serve with additional syrup.

2 cup finely minced cooked ham

1/4 cup finely minced onion

1 cup mashed potatoes
|

1/4 cup finely minced celery
|

1 tbsp worcestershire sauce
|

1/4 cup finely minced green pepper (optional)

salt & pepper to taste

Heat oil in saucepan. Add onion, celery and green pepper and saute until tender but not brown. Mix together ham, potatoes, and worcestershire with sauteed vegetables. Shape ham hash into 8 round cakes about 1/2 inch thick. Brown on both sides in lightly greased griddle or heavy frying pan and serve.

Recommended Utensils:
- A 10 to 12” cast iron skillet or skillet that can does not have an insulated handle and can be put under the broiler - A wide mouth (6”) spatula
Preparation:
Set oven racks so the top rack is no more than 8” from the broiler assembly and turn broiler on. Add the oil to the cast iron skillet and spread it around by tilting the pan. Using a medium high setting, heat the oil. Stir together the egg and water. Once it is steadily smoking, add the egg mixture evenly around the pan (the eggs will cook vigorously and quickly). Immediately add the ham, then cheese to ½ of the omelet (the round omelet will be folded in half). Pour the maple syrup over the cheese and ham.
After the omelet has cooked for about a minute, remove the skillet from the stove, than place it under the broiler. The top cooking will allow the omelet to rise, making it fluffy. After about two minutes, remove the pan from the oven. Using a wide mouth spatula, flip the omelet in half and transfer to a serving plate.

Heat water and salt to a boil. Add oatmeal and cook 5 minutes. Add rest of ingredients. Pour in a greased baking pan. Bake in a 350 degree oven for 1 hour.
