Cook bacon in fry pan until crisp. Reserve 2 tbs. of grease and saute onions in grease until tender. Mix in flour, mustard, pepper and Worstershire sauce. Slowly stir in milk. Cook for 8-10 minutes or until thick. Mix in bacon and shredded cheddar until cheese melts. SERVES 2-3.

Preheat oven to 325 degrees F. Combine maple sugar, cornstarch and ginger in shallow baking dish. Stir in orange juice. Add ham slice, coating well on both sides. Bake 20-30 minutes basting with the sauce.

Dakin Farm Ham & Cheddar Casserole

Mix cheddar cheese, spaghetti, ham and mushrooms in greased 3-quart casserole dish. In saucepan, melt butter. Add flour and milk to butter for cream sauce. Stir slowly until thickened. Pour over ham mixture and mix well. Sprinkle with parmesan cheese and breadcrumbs. Bake at 375 degrees until mixture bubbles, approximately 30 minutes.
Preparation Time: 30 minutes

Fry all together in a frying pan on medium heat, stirring frequently for about 20 minutes. Put this mixture on 1/2 cut round hard rolls, put a slice of tomato on top and sliced swiss cheese. Put under broiler until cheese is melted. Remove from boiler and add some lettuce on cheese. Top with the other half of roll.

Cook macaroni as directed. Melt margarine or butter. Add flour and season and blend. Add milk slowly and cook at low temperature until thick and smooth. Make sure to stir constantly. Add cheese. Stir until melted. Place macaroni in 2 quart baking dish. Pour cheese sauce over noodles and mix well. Sprinkle with crumbled crackers or bread crumbs.
Bake at 375 degrees for 25-30 minutes until mixutre is bubbly and just starting to brown.
Makes approximately 6 single servings.

Maple-Apple Upside Down Ham Loaf

1lb ground cooked ham
|

1/2 lb ground beef

1/2 cup dry baked crumbs
|

1/2 cup chopped celery

1/4 cup chopped onion

2 eggs

3/4 cup milk

1/2 tsp tangy mustard
|

1 tbsp savory or basil
|

1/4 cup maple syrup grade B
|

1 tart apple, peeled and sliced thin
|

In large bowl, blend ham, beef, bread crumbs, celery and onion. Add eggs, milk, spice and mustard. Mix well. Butter 8 inch loaf pan. Arrange apples in bottom and cover with syrup. Pack in meat mixture. Bake in a 350 oven for 1hr 15 min. or until crusted. Let stand 5 minutes and turn upside down onto platter.

1 lb ground beef

1 small onion, finely chopped

2-3 bacon strips, cooked and crumbled

2 cup whole kernel corn

1 beef bouillon cube (optional)

4-5 large potatoes, mashed using 1/2 cup milk and 1 tbsp butter or margarine

1 cup boiling water

In a large skillet, brown the ground beef with the onion, garlic powder, basil, parsley, salt & pepper. Drain. Place in a 2-quart casserole. Add the crumbled bacon to the beef mixture. Dissolve the bouillon cube in the boiling water. Pour over the beef and bacon. Layer the corn on top of the beef. Spoon the mashed potatoes on top of the corn and smooth the top. Dot with butter. Bake in a preheated 350 degree oven for 30 minutes, or until the top is lightly browned.

Preheat oven to 375 degrees F. Fry bacon in skillet until crisp. Remove bacon from pan, crumble and set aside. Wipe the pan clean. Saute garlic in fry pan coated with cooking spray for one minute and set aside. Bake the potatoes for one hour or until done and cool. Cut a slit across the top of the potatoes and carefully scoop insides into a bowl. Add half o the crubled bacon, garlic, sour cream, 1/2 cup of cheese, 3 tablespoons of onions, milk, and salt to potatoes and mash. Increase oven temperature to 425 degrees. Stuff potatoes with mixture and top with remaining bacon, cheese and onions. Place potatoes on baking sheet for 15 minutes or until heated through. SERVES 5.

Brown chops in dab of fat. Add salt and pepper and place in 2 qt. casserole. Combine remaining ingredients. Bring to a boil. Pour over chops. Cover and bake in a 350 degree oven for about 1-1 1/2 hours.

¼ cup Pure Vermont Maple Syrup

Flour to thicken gravy (optional)

Preheat oven to 350º. Place chops in greased flat baking dish. Combine other ingredients over low heat and pour over chops. Cover and bake approximately 20 -25 minutes until warm, basting occasionally. Remove chops, keep warm, thicken sauce and serve over chops.
Special note: Dakin Farm Center Cut Pork Chops are fully cooked and simply need to be warmed and served. Please take special care to not overcook.

Place chicken pieces in a shallow buttered baking dish. Mix remaining ingredients and pour evenly over chicken. Bake uncovered 50-60 minutes at 400 degrees F. Baste occasionally. Delicious on bed of rice.
